    The most number of time zones on any passage I have sailed was between
    Azores and Bermuda - a total of four time zones I believe. For that
    passage we set "boat time" to the time zone for the middle of the passage.

    Other than that I have made "boat time" match the destination,
    although that is arbitrary.

    It seems to help people maintain a good grip on time if the sun rising
    and setting matches the numbers we use for time in a way they are used to.
