I have a Magefesa pressure cooker that has the two short handles. It
does not have the screw clamp for the lid; rather, the lid has a series
of flanges so that one sets the lid down in the matching cut outs and
rotates it. Most of the new PC do not have the clamp lid. The Magefesa
rated high in tests, and is much less expensive than other brands.
The Magefesa is a spring pressure vavle (not the weight) and has two
other over-pressure protectors. Pressure can be quick released by means
of a valve by one of the handles.
I purchased mine off the web, just do a search for Magefesa. It is 6 qt,
cost $99 USD. IT tends to be taller with a smaller diameter than others;
could be an issue for canning, but I love the height in less than calm
weather.
Lorna J. Sass has written pressure cooker cookbooks. I have her "Great
Vegetarian Cooking Under Pressure" and have never turned out a bad
recipe.
