I will have to give this some thought in addition to
    canning with a pressure cooker.

BTW, I took the time to visit a West Marine last
evening. Haven't been there for years and it has
changed a little. It's gotten larger by far. Anyway,
Jodie and Gail especially, they have bags that work
with a vac-pac system. Seems like there were different
sizes but all were the same price; about $28 for 32(?)
gallon size and more bags for each size lower. I
didn't see the vac-pac unit though. Do they still make
    them?

This is the vacuum system I have, I don't think they

    EBay pretty
    regularly.

It has the bag sealer which you can use with or
    without vacuum. If
you are vacuum sealing you insert the nozzle of the
    handheld thingy
into a receptacle on the sealer unit. There are also
    "corks" for wine
bottles that you can vacuum seal with this, as well as
    canisters and a
lid that works on coffee cans, etc.. The units are
    d/c powered,
using a/c adapters. I already packed this so I don't
    know the power
consumption. (Moving this week) Anyway, I think if
    I ever move
aboard it will be a big help.
