Bryan,
I had considered the chain-rope combination but the configuration of our
anchor windlass appears that it would make transitioning from rope to chain
would be quite difficult. One hundred feet of chain with 300 feet of rope
would be my preference if I can figure out how to feed the rope around the
capstan and get the chain into its gypsy head.

Most of the ocean-going sailors I know, including several circumnavigators,
carry quite a bit of chain...minimum 300 feet. They also carry anchors that
are at least one size larger than "recommended" for their boat size/type.
Many cruisers end up re-painting their boat's waterline, for all the gear
they choose to carry <G>.
That said, with your catamaran, weight has to be an issue. A 40-50 foot
chain leader, spliced to 300 feet of nylon three-strand twist, may be an
acceptable compromise. I've always wondered if wire rope could also be used
as part of ground tackle, but I've never encountered anyone who's tried it.
