The flotation of a boat depends on its freeboard. not what it is made of.
The total weight it can be the same for GRP and steel boats. But in this case the steel boat has less ballast. This gives the boat a less stability and slower sailing up wind. In a steel boat the weight is more evenly spread through out the hull this gives it a more comfortable ride but greater chance of "hobby horsing" in a choppy sea coursing it to loose wind from the sails.
If a steel boat gets hold there is more chance of getting someone to effect repairs in far away places. Steel is widely available as well as welding skills.

Yes, but if you DO get badly holed in a steel boat, wouldn't you have less
time to get out/off than with a lighter hull - i.e. wouldn't a steel hull
sink faster? Or is my logic off?
