Of prominent naval architects designing boats for such a purpose, my
first guess would be Bolger of course (try a query on the Bolger list
on Yahoo). Certainly his AS29 and AS39 designs, both decent
liveaboards with flat bottoms, 7'11" beam, <8' height, bilgeboards
and masts in tabernacles, are easily containerized, probably also
Manatee (33' LOA), maybe (probably) several other designs of similar
size.
