T&T: Dual Racor Filter Question

I would like to change my existing single Racor diesel filter to a 75500MAX
    dual filter.

The Racor catalog says "A single valve on all the double manifold MAX models
isolates one filter/separator for service while the other keeps
    operating..."

If I shut off both the inlet and the outlet with the same handle, how do I
refill the filter body (remove the air) if I drain off water or change the
filter element before returning it to service.

If I replaced the filter element, assuming fuel is available in the line, I
would expect to allow some to flow into the filter before replacing the top
    and then opening the outlet.

    Am I overthinking this?
