My problem is the height of my swim platform off the water. The kayak
    will slide under it.

Of course, every boat and every swim platform is different. From getting
into my kayak from my boat as well as watching other people, I think that a
simple solution would be to install two cleats, probably on the underside of
the swim platform. When a kayak is secured at both ends, it provides a
stable platform for stepping into. I've always gotten into my kayak with
the assistance of two other people holding both ends against the swim
platform. This can be done by other kayakers in the water too.

So far, no one has fallen in.
