Steve - it's no problem. Just use wire nuts - the red ones.
Kidding... you might want to take it to a marine electronics shop and
have them do it. I had two transducers spliced into a switch box so I
could switch between the two transducers - worked (and still does) like
a charm.

I am installing a Raymarine fishfinder on my dinghy (an older HSB
unit). The depth transducer has a an approximately one inch connector
on
the end that I will never be able squeeze through the tiny and crowded
cable race to the transom.
The manual for the transducer is emphatic that the cable should _never_
be
cut, yet if surf around the Raymarine site, there is a notice about how
to
install adapt an ST60 transducer to an ST50 instrument -- the answer is
to
cut the cable and attach the ST50 plug to the ST60 cable using a sealed
junction box.
Is there any real reason that I cannot just cut the cable in the middle
and
splice it back together?
