I would be interested in reading about this if you can point me in the right
direction.

Brett,
The post I made was back in Jan 2003. Its probably in the achieves somewhere
but since I've still got it, I'm posting it again.
It is possible to install a wet exhaust alarm on most any engine for about
$20-25 and 30-60 minutes of time. All that is necessary is a device called a
snap disk control or trade name "ThermoDisc" attached to the exhaust elbow
and wired into the existing low oil pressure and/or high coolant temp alarm.
(Which most all boats have) The controls are about the size of a small
wristwatch and are available in either fixed temperature or adjustable temp
models from about 100 degrees to 180 degrees.
I used a large hose clamp to attach a 160 degree one to my elbow just beyond
where the raw water enters it. If you think that is too warm then just get a
cooler one but believe me if you lose raw water to the elbow it will get
above 160 in a hurry.
You can periodically check the operation by taking a hair dryer or heat lamp
and warming the snap control to see if it is still working. Historically
they are very reliable.
I hope you find this helpful. Let me know if you have other questions.
