For security's sake, I have started turning my dockside water off at the dock
end
when I'm away from the boat even for a day or two. When we return and turn it
on,
we have air at the faucets and spraying water everywhere? Both hot and cold.
The
pressure pump to the onboard water tank stays on all the time. Is this just
something
I should live with or is there something I should be looking at?

Just some thoughts that might help
Turning the water off from the shore is a good thing when not in use. I
personaly will not charge my vessell water system with shore water. I have
seen vessels go down when something goes wrong inside and floods the boat
after a few hours even with good pumping arrangements.
I would use the internal pump / tankage on the vessel only and fill water as
required and I do so as a live-a-board.
When pressure comes off the system air will surface to the top of the system
from my experience so at a high loop or tap.That air should clear shortly
after the high areas are cleared via opening the taps for a second or two.
Thats with no leaks.
If the pump will then not presurise the system enough to activate the presure
sensor ( is the pressure sensor working correctly ) you may have another
source of air. That source should also present water when the system is
presurized unless the vessel water pump is one of the high points in the
system. That could alow air to get into the system from the tank side yet
would probably show no water leak.
