Thanks. I have been temped to use MDF, or similar, because the finish
surface, especially compared to plywood beadboard surfaces I have found,
is so superior. I suppose that in the northeast, this product is more
available, as it is more traditionally used in houses and on boats.
Yesterday I found a really nice product at a local lumber yard wish is a
beadboard profile with a good vertical grain wood, smooth finish, good
tounge and grove fit. Also, it is pretty thin - probably about 3/8 inch.
The problem is that it only comes in 4-foot lengths (traditional
residential wainscot). If I can track down the supplier and get some
longer lengths it will be perfect - well, except for the price. I'll
keep looking.

I think the use of any form of fiberboard on a boat is a really
bad idea.
MDO plywood (medium density overlay), commonly used for outdoor
signage, would be a good choice.
