I agree, I think you are covered.

However, the sensors do not go on the manifolds, they go on the elbow. And a
low temp (say 110) is better, just fuss with the right place to get that
temp at max RPM. This is virtually instantaneous alarm, and you have some
time to shut down without damage.

Without going through the scematic, it seems to me that the sensor is
slightly better protection as everything has to be working to get water
injection into the elbow. Contra: if anything is not working, you will get
an alarm.
