I don't see that a 55 gal tank would present any problem over a 35 gal.
If you want to minimize odor:
   1. Make sure all hose runs from the head to the tank are continuously
downhill. Avoid any low spots where effluent will sit. Odor will eventually
permeate the hose at that point.
   2. Use premium quality heavy-wall hose. It's cheaper than replacing all
that hose in a few years. I used sched. 40 PVC pipe for the long straight
runs, and hose for strain relief and sweeps.
   3. Avoid tight turns in the hose. Large radius downhill sweeps as much as
possible.
   4. Vent the tank well. Vent lines as short as possible and as large as
practical.
   5. Flush with enough water to move the effluent through the hose to the
tank. I'm not talking gallons here, but the one or two pumps is going to
leave waste in the hose which will eventually cause odor to permeate.
Good luck and an odor free boat.
