TWL: Repacking Rudder Stuffing Box

The starboard rudder stuffing box on my trawler has been leaking and I
decided to repack it with the boat on the hard this winter.

1. I assume that I measure the space between shaft nd outside of rudder
support to get packing size?
2. How do I determine how many rings will fit is 2 or 3 typical? With
three I would consider using the inner ring of some "drip-free' packing I
have left over from another boat.
