Well...since I'm the jockey that's riding this poor dead horse...I'll keep beating it. ;-)
You tested the wrong *model* multi-tools, Larry. Leatherman, and others, *make newer tools designed with blades that can be easily and quickly opened with one hand*, just like most any folding knife. I own one of those newer models, and am confident it can be opened one-handed in 1-2 seconds.
I agree with your times on the models you tested...those are 2 handed operations, that could easily take multi-seconds.
Here's the argument for the multi-tool approach. No question in a true emergency situation, with only one hand available, a *fixed blade single purpose knife* would be better...but a well designed multi-tool would be just as good as most any folding blade knife (and adequate)...and would be FAR handier the other 99.99% of the time one is on their boat. The constant use a multi-tool gets on the boat, means the Captain gets a lot of practice with it...that can be a distinct advantage...and besides you can wear it anywhere...without looking like a terrorist. ;-)
