I'm a big fan of Spyderco folding knives. They are made to last a lifetime,
and they can be opened one-handed. Their serrated-edge knives will saw
through rope toot-sweet. They are rather pricey, however. I've got the

The Perception-Harmony Kayak 2 1/2" Rescue knife works pretty good, and has
a clip on the back. At that price you could keep it clipped to your PFD, or
other important place, and just leave it there. It opens one-handed, and has
a positive lock.
