How about a digital camera? Photograph the watch and sextant after each
sight. Cheating, yes, but you won't need your reading glasses and you can keep
your fingers covered. :-)
Alternatively, perhaps a space suit? That is, make the plexiglass dome much
smaller and keep the sextant outside it. If the sextant is *outside* the
plexiglass dome, refraction won't be a problem!
