On a naval ship in similar circumstances (in piloting waters), the navigation
team would indeed be plotting fixes (visual or radar) every 2 to 3 minutes.

If you are running single-handed, you obviously can't manage a proper plot and
mind your course too. A shortcut I use is to record my log by speaking into a
small microcassette recorder. I transcribe it later.

In open waters there is usually plenty of time to manage your DR and EP
properly.
