The Wilcox seacocks have one handle that fits 1 1/2" to 2" and another that
fits 1" to 3/4".
If you remove the 1/8" pipe plugs from the seacock body and replace with
stainless grease fittings it is an easy maintaince task to pump a bit of
grease in there once or twice a year making the valves quite easy to operate.
In exchange for this effort you get a strong bronze reliable sea valve
securely bolted to the hull.
A ball valve screwed onto a thru-hull is a very fragile situation. The
thru-hull is threaded and there is not much meat left to resist breaking
forces. Imagine stepping on one some dark and stormy night and suddenly
feeling your foot-hold vanish to be replaced by a fountain of cold seawater.

I don't understand what you mean by "the head sheared off". Do you mean the
square boss on the handle end of the tapered cock plug, the place the handle
fits onto? It is hard to imagine this shearing off a Wilcox seacock as it is
a hunk of solid bronze. I imagine the handle would fail first. Perhaps you
did not have the Wilcox seacocks that I am using.
