IMHO, boat yard security is at best questionable, especially for long
    term storage.

For years kept a boat on the south shore of L Erie, IOW, similar
    conditions to L Ontario.

The following is based on that experience.

Plan on stripping the boat of everything possible, including sails,
    running rigging, cushions, electronics, etc.

Winterize engine, empty and winterize waste system, potable water
    system, etc.

    Fill fuel tank minimize condensate.

Plan on pumping out old fuel when you recommission.

Place everything you have stripped off boat, in a secure, off site
    storage facility.

SFWIW, you may find it financially attractive to sell existing boat as
is, then purchase another boat when you come back into sailing.
