Some time ago you mentioned building an exhaust temp alarm. I would like to
do this too, but, all I could find for a sensor was an adjustable aquastat
@$55. What did you use?

I use a normally open 120 deg F snap action thermoswitch (Klixon style)
bought at a HVAC store. It looks as it it was mounted in or on a duct, has a oval
bezel with two screw holes.
On the package, a plastic bag, is written:
White-Rodgers 3F01-121 fixed setting snap disc fan control close 120 deg f
open 110 deg f.
I use a spring around the rubber exhaust hose with the ends hooked into the
screw holes in the switch bezel.
The switch on the genset is in parallel with the oil low pressure and block
high temp switches to shut down the unit.
On the main engine it sets off an alarm beeper.
