My boat is more-or-less fully insulated.

On the front third, after removing everything removeable, exposing every
square inch of hull and deck, and masking off everything that was not to have foam
on it, I had a professional team spray the hull and deck with polyurethane
foam. The crew normally did fish holds in fishing boats. This worked very
    well.

On the aft third, I mostly cut slabs and chunks of styrofoam and glued them
to the hull and deck using Great Stuff polyurethane foam and filling around the
edges and gaps with it. This does not work quite as well as the styrofoam is
not as water proof as the urethane foam, but it does stop condensation and
you can do the job bit by bit.
