We chose one large 10" deep sink, because I use a pressure cooker fairly
frequently and wanted to be able to wash it with ease. For everyday use, we
keep a small plastic dishpan in the sink that effectively divides it in two.
We can drop dirty dishes in soapy water in the dishpan, but still have the
other half of the sink "clean" for rinsing dishes or washing vegetables.
We've used this method for years in our house, where the kitchen is not much
    larger than the boat galley.
