The answer probably lies is what, and how often you cook. If you tend towards using large pots and pans then you'll appreciate a large sink when it comes time to clean. On the other hand, two sinks allows you to use less water since you can soak stuff in hot soapy water in one sink and then rinse in the other. Assuming water supply would be an issue the other thing to think about would be a salt water faucet (foot pump) for washing and then just using ships water for rinsing.
If water is not an issue, and space is available, I'd go for one large deep sink and one smaller sink.
