In domestic situations, a plastic coupling is included to avoid currents
flowing through the piping and the tank which could (theoretically) cause
electrolysis. The same theory can apply to boats but usually there are
enough hose and hose clamp couplings or PVC plumbing that it is doubtful if
you need the PVC fitting right at the tank.

RecentlyI developed a leak on the inlet to my hot water heater. The 1/2
inch plastic nipple simply broke off. Is there some reason to use plastic
as opposed to brass?
