    Your math is off a bit. Water weights 62.4 lb/cu ft. There are 7.48
    gal/cu ft, so water weights 8.5 lb/gal. At 1000 gal that 8,500 lb. While
    that's a good deal less that 64,000 lb, you're right that it's a lot of weight.

    With a family of four we use 100 gal in about a week, so I'd be inclined to
    set your meter to 100 gal and reset it each day. That's 850 lbs, which
    most boats should be able to handle.
