Check with a knowledgeable insurance agent and he'll tell you that one of
the biggest category of claims from liveaboards is city water sinking their
boat. No matter how disciplined you are, no matter how pure your
intentions, one day you'll forget to turn the city water off and you'll sink
your boat (usually drowning your dog, cat or canary in the process).
Happens all the time.
As has been suggested, I'd opt for an onboard pressure water wasting system
and just fill my tanks from city water when needed. After all, few boats
carry enough water tankage to sink the boat if it all got loose in the
bilge. An added benefit to this approach is that you keep the water in your
tanks fresh.
