Several things to consider.
Modern engine antifreeze is a chemical soup designed to include rust
inhibitors, water pump lubrication, etc, and very necessary for the
operation of today's engines.
Doubtful if the non toxic RV antifreeze would keep the engine happy.
BTW, who drinks hot water, or for that matter, even cooks with it.
Next there is the matter of pressure differential across the heat
exchanger.
If the potable water pressure is higher than the engine coolant pressure,
then the potable water escapes into the engine cooling water in the event
of a crack.
My guess is that the potable water pressure does in fact exceed the
engine coolant pressure.
Bottom line, why sweat the small stuff?
Check the coolant level at the start of each day along with your other
normal daily engine inspection procedures and observe the color of the
hot water coming out of the faucet each time you use it.
After that, time to get on with it.
