If you simply follow the course to steer on the GPS then you are right, your
track will curve up to the north before coming back down to the destination.
But the way I use the GPS is to watch the Plot page, the page that shows a
bird's eye view with the line from last waypoint to next waypoint and your
ship shown leaving a trail behind it. I steer whatever course is needed to
keep my ship on (or near) the line on the screen.
In the case of a passage from FL to the Bahamas across the Gulf Stream my
track will be a straight line from start waypoint to destination waypoint if
I am diligent. The crab angle will vary widely depending on the cross
current, but my ship will remain on the straight line between the two
waypoints.
