    Perhaps your shoreside mattress has a vapor barrier. Also, perhaps moisture
    does not migrate through cotton mattresses as readily as it does the spongy
    foam mattress.

    Perhaps your shoreside bed plywood is not as cold as the one on the boat so
    there was not as much migration of the moisture from the top to the bottom.

    Perhaps the air in your house is dryer than the air on a boat, the marine
    environment is so moist, so the bedding would have a better chance to dry out
    between uses.
